Verdejo "El Gordo del Circo", Casa Rojo
TASTING NOTES:
"El Gordo del Circo" comes from old vineyards in the Pagos de Cuesta Redonda, Campo Viejo and La Vercera, located in Olmedo, in the province of Valladolid, where the Verdejo expresses all its character. The grapes were harvested during the first week of September and in the early hours of the day so that the grapes entered the winery at the lowest possible temperature (around 8ºC). Once the grapes are received, a maceration is carried out for 2-3 days, followed by a very gentle pressing of the grapes. For the elaboration of this wine, only the yolk must and the first pressing are used. This must has been introduced for its alcoholic fermentation in French oak barrels and after fermentation, it has remained in the same barrels for 3 more months until its perfection in aging with its fine lees and weekly battonage.
